Trial & Ale Brewing Company was founded in 2019 in Edmonton, AB. We focus exclusively on mixed-fermentation sour and wild ales, relying on time, microbes, oak maturation, and careful blending to create beer with bright acidity and complex flavours that unfold with every sip.
Why did we call ourselves Trial & Ale? Well, we began by treating mixed fermentation like a discipline: study, controlled trials, meticulous records, and constant calibration.
We scoured technical references, translated primary sources, reviewed academic work, and ran iterative experiments, changing one variable at a time to understand the impact of microbe selection, temperature, oxygen exposure, and vessel dynamics. The conclusion? There isn’t a single “best” method, but rather the need to build a cellar that supports diversity while remaining measurable and repeatable. In practice, our beer is made in the blend: combining barrels across a spectrum of acidity, aromatics, phenolics, and structure to achieve balance and consistency.
We produce a variety of beer starting with different bases and microbe strains. Our releases include single barrel expressions, multi-barrel blends, and dry-hopped or fruited variants.
