A Saison Imperiale

We are constantly told that everything in life is better in moderation. We would like to posit that sometimes there is a time and place for being heavy-handed. When selecting barrels for this Saison blend, we just wanted more. More flavour. More funk. More everything. We found ourselves gravitating toward ester forward barrels, with very traditional Saison flavour characteristics. Fruity and peppery, it’s unmistakenly Belgian in profile, but with the unique house Brettanomyces character we are known for. This blend truly is more. Despite the bigger ABV dragging it into the Imperial range, we are quite pleased with the fermentation. No trace of heat or alcohol can be found on the palate, which leaves more room for the mouthfeel to shine through. Our long, slow fermentation processes, barrel care, and specific blending choices are all responsible for the delicate nature of the overall profile. We believe pushing the limits of what can be achieved within a style leads to interesting outcomes. When it comes to farmhouse ales, we are always surprised by the unique wild profiles possible.
