An Even Deeper Introspective Reflection

Once in a while, we like to highlight the diverse flavour compounds each of our microbe mixes produce. Our latest juxtaposition is layered atop plums. We selected a base blend from our pale base sour mixed ferm barrels for An Introspective Reflection, and this single barrel from our long-aged mixed ferm cellar to compare and contrast (in a deeper dive). The only difference in the two blends is the microbes. But the results speak for themselves. We chose to bottle this release, as the maturity and depth from an extended period in barrel deserves a sharing occasion. The delicateness of the acidity and the plums creates a lightness, while a pronounced Brettanomyces profile stands in the foreground. Obvious contrasting notes emerge from the two blends, highlighting the post-primary barrel microbe contributions to this release. The isolation of variables in the two blends allows for what we know to be true in all of our barrels, that the microbes in each barrel contribute a unique signature to each beer we release. We love how this single barrel release delivers a truly unique ferment. We strongly consider enjoying alongside An Introspective Reflection to compare the differences imparted by the microbes.
