Plums are a confusing fruit. Whether eating a fresh plum, or sampling all of the mystique of this delicate, yet extremely complicated fruit, reflection is needed to bring out the most in the experience. Humans have been making rich culinary treats with plums for thousands of years. The Japanese produce Umeboshi, with its deep flavour. In Romania and Modova they enjoy Colțunași, which is a dumpling-like dessert usually featuring a whole plum inside. What sets plums apart from the other stone fruits is the richness of flavour, and amazing juice. With a dark purple skin, the underlying flesh is a pleasant surprise and a delight. Interestingly, one of the best natural media for Brettanomyces is the skin of plums. Additionally, “plum skin” is a common sensory descriptor for flavours that emerge from mixed ferm cultures.
