While there are some quite obscure stone fruits, one fruit reigns synonymous with this category above all others: the humble peach. Most people are familiar with peaches. You’ve likely been eating them since infancy. What is not as well understood is what happens during the breakdown and decomposition of the peach. Very few fruits decay as violently as the peach. The odours produced during this breakdown would rival the worst you’ve ever experienced. We actually had this beer lab tested for the presence of indole during production (fortunately for everyone, there was no indole). However pungent the nose, the resultant flavour is so delicate and subtle, it not only gets a pass, it gets an ovation. The unique nose of this blend drives the experience of this mixed fermentation, and provides a complex sensory experience from sniff to swallow. We applaud the peach’s aggressive last stand. Enjoy!
