Confusion. How does a fruit with very few redeeming flavour qualities, and required growing conditions that can best be described as an ecological crime, produce a mixed fermentation blend that is balanced, nuanced, and cranberry-licious. These unredeemable berries pack a flavour punch that normally requires absurd amounts of sugars to offset. However, we view the pleasant result as a testament to the power of our sour base blending. It's impossible to not hear a babbling brook or mountain stream flowing past you when you have this in your hand. The beautiful hue of this blend is to be enjoyed while it lasts, as our microbes will continue to metabolize the colour over time, leaving even more complexity in its place. Not to be missed is the traditional Brettanomyces funk accompanying all Trial & Ale blends. While softer and more delicate than typical Brett expressions, this distinct attribute ties the summer together in a way only a Western Canadian mountain town can.
